    Tonnellerie de L'Adour is small family owned cooperage located in southwest France.  The local climate enables Adour to season the raw material outdoors to obtain the high quality wood to produce handcrafted oak barrels.  The perfect drying of the intercellular water of the wood fibers gives structural stability to the staves while allowing the degradation of undesirable phenolics and promoting the microbiological process that matures the wood, making them attractive to winemakers. 

    Staves are bent into shape using the traditional method of fire or thru the use of steam which helps to leach the bitter tanins that remain after natural aging.  Perfect toasting is achived by controlling both temperature and exposure time thru the use of fire or embers.
